Okay. This was hands down my favorite recipe from Pinterest thus far. I should first note that the veggie burgers I posted about last week were coincidentally from the same blog, Cinnamon Spice and Everything Nice. I hope I won’t be dealing with a lawsuit anytime soon but I am giving credit where credit is due, right?
I have tried to make the baked, healthier version of chicken fingers many times and somehow they always end up looking freezer burned, even after an hour in the oven. These fingers were legit. Although I am fairly certain that you consider me a person who sustains the majority of her energy from doughnuts and tacos, I actually do a fair amount of healthy cooking and try to save the splurging for the weekend. Heavy emphasis on try.
I only made a few modifications this week. First of all, the recipe is actually for honey mustard pretzel chicken, but in my mind, chicken fingers always sound better than chicken. I used the organic chicken cutlets from Mariano’s, which are conveniently already cut into strips. I also substituted lemon juice for vinegar and crushed the pretzels by hand because the food processor I own is imaginary. I am seriously considering doing a Kickstarter for a food processor, a car and a new puppy. Anyone want to contribute?
